Simple Meal Prep Lunch Idea
Ingredients:
2 lb ground turkey
3 bell peppers
1 zucchini
1.5 cup dry jasmine rice
1 bush of cilantro
1.5 limes
Salt to taste
3 cups of chicken bone broth
Seasonings:
Ground Turkey Instructions:
In a frying pan, brown 2 lbs ground turkey
Add Butt rub and Urban Accent Seasoning (I just eye ball how much, I don't measure- the two of these seasonings together are to die for!)
Jasmine Rice Instructions:
Bring 3 cups of chicken bone broth to a boil
Add 1.5 cups of jasmine rice
Bring stove to a simmer, cover the pot for 22-24 min (until rice is soft and all liquid is absorbed)
Chop cilantro up really fine (or use Kitchen aid hand blender, definitely saves you time)
Once rice is done stir in cilantro, desired amount of salt, and squeeze 1.5 limes in rice and stir
Vegetables Instructions:
Chop bell peppers and zucchini to your liking
Saute in the same pan you used for ground turkey, you will not have to use any oil
Once soft add All purpose seasoning
Prep:
Add 6oz of ground turkey in 5 glass containers (you will have extra- I use the extra through the week for dinner)
Divide veggies up between the 5 containers
Add 1/2 cup of rice to each container. (There might be extra rice, again you could use the extra for dinner during the week)
